I’m talking about his Ford Fiesta ERX, which puts down 600 horsepower and over 800 lb-ft of torque. Because it’s an electric car, that torque is ready in an instant. In the video down below, you’ll see him whip this electric Fiesta around Höljes Sweden. For those of you who have not been with us week after week to tune into maybe the most outrageous guest off all-time on The Brilliantly Dumb Show, ‘Jersey Jerry’ has been setting the place on fire. Jerry, a wild card with no filter from New Jersey, is competing for a chance to win his own segment on the show. Mr. Tears was given the name for his constant ability at the track to pick nothing but losers. This weekend Jerry looks to redeem himself with his pick Authentic on a win, place, or show bet. Jerry insists to bet a ton on it, but with his track record, you may want to think twice before hammering about on Jerry’s “lock”.

The Reverse Sear: The Best Cooking Method for Steak

While on book tour in Chicago a few months back, I had the honor and pleasure of sitting down to enjoy a leisurely meal, and a few cold beers, with the one and only Meathead Goldwyn. For those not in the know, Meathead is a world-renowned pitmaster, and he distinguishes himself from the pack by focusing on the science of cooking.

Our delicious food ran out after an hour, but the conversation, and the beers continued. And of course a good conversation can always stir up an opinion or two. As I learned, Meathead never shies away from making and defending opinions that go completely against culinary tradition, instruction, and know-how.

Though such controversy is well-documented on his own site, I thought it prudent to put one of his theories to the test. The challenge? Meathead believes that we are cooking our steaks all wrong!

Now, steak carries high favor over here at the Art of Manliness, and as one who has written many a recipe on cooking it, I tried my best not to be offended. But the more I listened, and the more I read up on Meathead’s reverse sear technique, the more I became intrigued.

Throwing Tradition Out the Window

Although there are many ways to cook a steak, most chefs, culinary professionals, and experts agree on which method is best: sear the heck out of it over high heat, followed by a period of indirect heat until the steak reaches the desired temperature, and finish with a 10-15 minute rest (off of heat) until ready to serve.

Meathead says to throw that all out the window, and to do the whole process in reverse.

Certainly, this is not the first I have heard of such a technique. French chefs pioneered a similar method of cooking in the 1970s using their sous-vide style of cooking. Essentially, the sous-vide method entails sealing food in some sort of wrap, and submerging it into a precisely controlled, typically low temperature, water bath. The benefit of this technique is that it slowly brings the entire cut, from edge to edge, to the exact internal temperature desired — say 130 degrees. The problem with this method is that one would likely never eat the grey mass of meat when pulled from the bag, even though its internal temp is a near perfect medium-rare. To solve this issue, a chef will finish a sous-vide cut over high heat on a grill or pan to get the caramelized flavor and color (known as the Maillard reaction) that many of us are accustomed to enjoying. Additionally, because the cut was slowly brought up to temperature, it’s more evenly heated through, which means that resting the cut is not necessary (resting normally allows for some of that searing heat to transfer into the center). All that said, the sous-vide method is time consuming (it can take hours to bring a cut up to temperature), and it can be expensive — a decent in-home machine, though coming down in price and improving in technology, will still run you a few hundred bucks.

Fortunately, you don’t need a special sous-vide cooker to use the reverse sear method on a steak, and you can get a similar effect using an ordinary grill or smoker. Meathead in fact claims to be the first to perfect the reverse sear by way

In defense of California

About a year after graduating from college, I packed my possessions into a rental van I’d split with a near stranger and departed my home state of Ohio. We steered onto I-70 West, bound for San Francisco.

At the time, I was less drawn to California in any specific way than determined to escape a state that was too conservative, homogenous, and religious for my tastes. Plus, oof, the winters.

But that soon changed. The more I explored California’s coastline, hiked the trails of the Sierra, stared up at the granite walls of Yosemite, and met others who felt pushed or pulled here, the more I developed what I jokingly call a “zeal of the convert” attitude toward the state. Today, more than two decades after I arrived here in that rental van, this allegiance manifests as knee-jerk defensiveness when others take shots at California.

And so it’s been heartbreaking to watch my adopted state suffer through some of the deadliest and most devastating fire seasons in its history. And it’s been infuriating to see commentators pounce on the tragedies, or the planned electricity blackouts designed to prevent them, and declare that they’ll doom the state or spark a mass exodus.

It’s an increasingly popular take, producing ridiculous headlines like “California is becoming unlivable, according to science” and “California is a failed state. How do we know? They’re moving to Arizona in droves.” (Links withheld out of pettiness.)

But I’ll admit that my reaction to such suggestions wasn’t as swift or aggrieved when this year’s outages and fires began.

Last month, the state’s main grid operator ordered a series of rolling blackouts, California’s first unplanned outages in nearly two decades, as millions of air conditioners strained to keep up with blistering heat waves.

That same week, hundreds of small lightning-sparked fires converged into conflagrations that soon ripped across more than a million acres, forced more than 100,000 residents to vacate their homes, and filled Northern California’s sky with dangerously high levels of particulate matter. Fires have destroyed thousands of properties and killed eight people in the state so far this year.

How does loneliness affect our brains?

Long before the world had ever heard of covid-19, Kay Tye set out to answer a question that has taken on new resonance in the age of social distancing: When people feel lonely, do they crave social interactions in the same way a hungry person craves food? And could she and her colleagues detect and measure this “hunger” in the neural circuits of the brain?

“Loneliness is universal thing. If I were to ask people on the street, ‘Do you know what it means to be lonely?’ probably 99 or 100% of people would say yes,” explains Tye, a neuroscientist at the Salk Institute of Biological Sciences. “It seems reasonable to argue that it should be a concept in neuroscience. It’s just that nobody ever found a way to test it and localize it to specific cells. That’s what we are trying to do.”

In recent years, a vast scientific literature has emerged linking loneliness to depression, anxiety, alcoholism, and drug abuse. There is even a growing body of epidemiological work showing that loneliness makes you more likely to fall ill: it seems to prompt the chronic release of hormones that suppress healthy immune function. Biochemical changes from loneliness can accelerate the spread of cancer, hasten heart disease and Alzheimer’s, or simply drain the most vital among us of the will to go on. The ability to measure and detect it could help identify those at risk and pave the way for new kinds of interventions. 

In the months ahead, many are warning, we’re likely to see the mental-health impacts of covid-19 play out on a global scale. Psychiatrists are already worried about rising rates of suicide and drug overdoses in the US, and social isolation, along with anxiety and chronic stress, is one likely cause. “The recognition of the impact of social isolation on the rest of mental health is going to hit everyone really soon,” Tye says. “I think the impact on mental health will be pretty intense and pretty immediate.”

Yet quantifying, or even defining, loneliness is a difficult challenge. So difficult, in fact, that neuroscientists have long avoided the topic.

Loneliness, Tye says, is inherently subjective. It’s possible to spend the day completely isolated, in quiet contemplation, and feel invigorated. Or to stew in alienated misery surrounded by a crowd, in the heart of a big city, or accompanied by close friends and family. Or, to take a more contemporary example, to participate in a Zoom call with loved ones in another city and feel deeply connected—or even more lonely than when the call began. 

This fuzziness might explain the curious results that came back when Tye, before publishing her first scientific paper on the neuroscience of loneliness in 2016, ran a search for other papers on the topic. Though she found studies on loneliness in the psychological literature, the number of papers that also contained the words “cells,” “neurons,” or “brain” was precisely zero.
